Explain why the temperature of the milk needs to be kept between 30-40 degrees during cheese production?

because you are using an enzyme for making cheese thats why you need to keep the temp at 30-40 degrees because all enzymes have an optimal temperature and if you increase the temperature for example then the enzyme will stop functioning properly because it is a protein and like all proteins excessive heat can cause it to denature and thus not work.
